Mini Apple Roses

Y'all.
I found a recipe for heaven in a bite.
They're called "Apple Roses". 
Look at these beauties:


They are pretty easy to make, but a little time consuming. To start, you have to slice an apple into really thin slices.


Then you place them in a prepared bowl of water with a small lemon squeezed in (no seeds) and microwave them for about three minutes to soften them.  Once done, drain out all the water and set aside.


The recipe I found called for puff pastry, but I substituted croissants since I had those on hand.  You roll the pastry out thin and slice into rectangles.  I found I was able to cut one roll of croissants into about 12 rectangles.  Then you smear a dab of apricot preserves on each pastry piece, sprinkle cinnamon, layer a couple apple slices on one side (skin out), fold the opposite half of the pastry over the apples, roll them up carefully and place in a greased muffin tin.



Next, you bake them at 375 degrees for about 20 minutes. Once done, sprinkle with powder sugar and enjoy!  They are SO good warm...

Homemade Strawberry Vinaigrette Dressing

I have been clean eating for awhile now and I am always on the look out for a healthy alternative to
dressings and condiments (and desserts too, but that's another post!).

I came across a paleo recipe for a berry vinaigrette dressing which sounded yummy, so I modified it a
little to create my own strawberry vinaigrette dressing since I already had strawberries on hand.


To create this recipe you will need the following ingredients:
- 1 cup ripe strawberries
- 1/4 cup balsamic vinegar
- 1/4 cup extra virgin olive oil
- 1 Tbsp Dijon mustard
- 1 clove minced garlic
- 1/4 tsp sea salt
- 1/4 tsp pepper


If your strawberries are not super ripe, you can broil them in the oven for a few minutes. 
Just make sure to use all the juice that escapes!

Place all your ingredients in a food processor and blend well. 
Then pour into a dressing container of your choosing and enjoy! 



You can use and combine any type of berries in this recipe.  It can also be refrigerated for a week or two, though I find it gets a little thick!

Leave of Absence


Since my last post, life has held me captive, albeit in a good way!

I will try to quickly update on our life since 2010...


I left you hanging with our wedding planning... 
We were married in November 2010 at Lakes Chapel and Clubhouse in Lake Park, Georgia.  
It was a beautiful location, all of our close friends and family were there and it was a wonderful celebration!


We honeymooned in Gatlinburg, Tennessee:


Before the wedding we moved to Fort Walton Beach, Florida, where my husband is originally from.  
It's nice to live in "paradise" and enjoy the beautiful beaches anytime we want to! (tourist season on the other hand...)


Fast forward to 2012. 
This is the year we bought our first home and became first time parents!





Since Reagan has come into our lives, time seems to be flying by!  She brings us so much joy and entertainment, and we try to cherish every moment because we know one day she will be grown and out on her own adventures!

As a family we have attended Braves games, Auburn football games, traveled to Branson, Missouri, flown to Atlanta and driven all over to visit family.  Justin and I have also taken vacations (or work trips) to Colorado, Las Vegas, Canada, Philadelphia, Indiana and Costa Rica!

So that brings us up to the summer of 2015. 
I may write about some of those past adventures and I will try to do a better job of keeping track of our new adventures!
